I dip whole Fennel flower heads in coverture chocolate . Beautiful aniseed flavour bombs. Guests are always intrigued as I arrange them in small vases. Have a try as they are delicious. 💐🧑🍳
I like to infuse coriander seeds in olive oil, for a nice taste of summer on long winter nights. I’m going to try it with rocket seeds as well this year.
Diolch Huw! I think the list could be expanded to include ‘weeds’, since we’ve all got them and they are so overlooked as food. Things like nettles, dandelions, amaranth and vetch might as well be utilised! I dry nettles for tea and love it. Also, I would also add fruit bushes e.g. respberry and blackberry for tea.
Hogweed (not the tall poisonous one) flower buds can be cooked and eaten like broccoli. I think their roots are also edible like parsnips (not tried yet, but keen to have a go). Yellow stemmed dock leaves can be eaten in salads or cooked. I like chomping small leaves - seem to taste a bit like cabbage and the seeds can be ground to use as gluten free flour - you'd need a lot of those though!
Sorrel leaves also good to nibble. Garlic mustard - delicious to nibble and put in salads. There are so many edibles in the hedgerow!
This is just an incredible list and has really helped me understand how much of each plant can be edible, making me much less stressed about having to add a lot more plants!

Immature rocket seed pods are a nice peppery pop in salads, but bland when cooked.

This is so interesting - I wonder, how do people find out what parts of the plant are edible? Take the French Bean flowers for example.

Immature pods! Also baby pumpkins are great - up to fist size pumpkins. Leaves also.
